This salsa is so simple to make! All you have to do is combine all of the ingredients in a bowl, and then place it in the fridge for 12 hours to allow the flavours to fuse together.

Cuban Mojo Marinated Pork
With a crust so delicious it could make a grown man weep, the flavour combo on this pork is to die for.
- 3/4 cup extra-virgin olive oil
- 1 tablespoon orange zest
- 3/4 cup fresh orange juice
- 1/2 cup fresh lime juice
- 1 cup cilantro, finely chopped
- 1/4 cup lightly packed mint leaves, finely chopped
- 8 garlic cloves, minced
- 1 tablespoon minced oregano (2 teaspoons dried oregano)
- 2 teaspoons ground cumin
- Kosher salt and pepper
- 1 1/2 kilos boneless pork shoulder
In a food processor, add the orange juice, cilantro leaves, mint leaves, and smashed (not minced) garlic cloves. Pulse until everything is finely chopped. Add this mixture to a zip lock bag, along with the rest of the oil, zest, lime juice, oregano, and cumin. Place the zipped up bag in the fridge overnight.
Then, all you need to do is baste your pork with the marinade and get cooking!
A Seasonal Fruit Salad
For a light and fresh finish that’s truly worthy of a poolside summer bash, test out this delicious fruit salad recipe while everything is still in season.
Summer Fruit Salad:
- 2/3 cup fresh orange juice
- 1/3 cup fresh lemon juice
- 1/3 cup packed brown sugar
- 1/2 teaspoon grated orange zest
- 1/2 teaspoon grated lemon zest
- 1 teaspoon vanilla extract
- 2 cups cubed fresh pineapple
- 2 cups strawberries, hulled and sliced
- 3 kiwi fruit, peeled and sliced
- 3 bananas, sliced 2 oranges, peeled and sectioned
- 1 cup seedless grapes
- 2 cups blueberries
Bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and simmer until slightly thickened, about 5 minutes. Remove from heat, and stir in vanilla extract. Set aside to cool.
Finally, layer your fruit in a large bowl (preferably a clear glass one so you can show of your handy-work) and then pour the cooled sauce over the fruit. For optimum flavours, cover and refrigerate your salad for at least 4 hours before serving.
